Typically, landscape photos have lots of detail, and that detail is an important element in the photo.

It's possible to have lots of detail without front to back DOF. A problem with front to back sharpness is that it deprives us of some distance cues.

Depends on the scene.  That said, it is rare that I stop down past f/8 on FF (f/4 on mFT) to get "enough" DOF, and the effects of diffraction softening are mild at such an aperture.

Distance clues include a less sharp, hazier, lower contrast appearance. Many landscape painters use this technique. The usual phrase is "aerial perspective" or "atmospheric perspective". As wikipedia puts it "Aerial perspective or atmospheric perspective refers to the effect the atmosphere has on the appearance of an object as it is viewed from a distance. As the distance between an object and a viewer increases, the contrast between the object and its background decreases, and the contrast of any markings or details within the object also decreases. Perhaps I've seen to many photos which range from sharp flowers (or another "interesting" element) in the foreground to a sharp middle ground to sharp mountains in the background.

How about some examples?

50mm f/1.2 on FF (25mm f/0.6 on mFT):

24mm f/11 on FF (12mm f/5.6 on mFT):

Canon 5D + 24 / 1.4L @ f/11, 1/60, ISO 100

24mm f/1.4 on FF (12mm f/0.7 on mFT):

Canon 5D + 24 / 1.4L + CPL @ f/1.4, 1/2500, ISO 100

Seems to me there's a place for all sorts of DOFs.
