I live in CO and can't get nearly enough hours behind a camera.  If you're into rock formations, the front range has much to offer between Red Rocks Park & Amphitheater, South Valley Park, Roxborough State Park (my personal favorite and usually slightly less crowded), and Garden of the Gods.  All of these are within 75-90 minutes of each other by car.  They are not as dramatic as some of what you can find in Moab, but they are wonderful in their own right.

Mt Evans is also particularly accessible as one of the highest paved roads in the US goes to within a few hundred feet of the summit.  Because of ease of access, the mountain goats are somewhat acclimated to people and are likely to be photogenic; there's also soem great photo ops on the way up, including two lakes.

I would also echo much of what has already been said.

If you're here in August, check out the Colorado Photography Festival - I attended last year and enjoyed the sessions I participated in.
