My advise is that fun first and photography second in amusement parks especially with family.  It's not practical to lug heavy gear or even with tripod in such crowded popular parks.

I carried 60D (Rebel could be even better) + Sigma 17-50/2.8 (F2.8 in low light is very needed) + Canon 70-200L/4.0 IS (the reach is much needed in the Animal Kingdom safari) + 430EX II (not that huge but still very powerful and much helpful to highlight evening parade or family snapshots).  All fit in a shoulder sling bag that I carried entire day and in rides without any problems.  I usually say FF is better than crop.  But I agree crop has advantage in evening family photos if you want background also in relative focus so a case you might prefer deeper DOF, no mention lighter/smaller operation advantage.

My family really had wonderful time when we went there in the Spring break in 2011, a popular crowded week in Disney calendar.
