I've never shot a wedding, but I have shot a fair amount of jewelry, so I know the basic idea.

The best ring shots I've seen have been with soft, directional light. Controlling the highlights is important for shiny subjects like wedding rings.

I would think window light and a tripod would give the best results.

If you are going to use a flash you'll want to get the flash off camera, and probably fire it through a diffusion panel to give soft-edged highlights and subtle shadows. A softbox would also give soft light, but the highlights would be sharp-edged and rectangular.
