5D's have been extensively used for professional and even television broadcast video.
Those are the people who dont use AF.
Many people, especially pros, use Magic Lantern if doing a lot of video, and this makes life so much easier if you need to re focus during video.
The only Canon DSLR that has constant AF, like a video camera, is the 650D, and that can do it becuase it has a hybrid sensor, designed for this.
