better to create b&w pic during, or after, picture is taken?

Always #2. You will be able to do a better job in post than the camera will. Plus you get the colour copy. The camera has a colour sensor so always takes the photo in colour anyway - the b/w is just a conversion it does with some default settings. A good b/w conversion is more than just a quick desaturate.
