Medium format over DSLR for weddings

Sorry but a dumb idea. The advantage of Nikon is the consistent flash exposures and mixed lighting white balance accuracy. MF adds absolutely nothing unless your clients want wall size prints. Even the 12MP DSLR's are fine for prints up to 30x40 most of the time and always good enough for 20x30 prints.
