I'm a complete amateur at airshows, but had the chance to shoot one last year with the Sigma 50-500 (non-OS).  It's a handful for a full day of shooting and I only had it on a Rebel XS.  Loved the range, but have recently acquired a 100-400 to replace it.  Haven't had a chance to shoot an airshow with it yet, but am eager to get the chance.  You should be able to get some nice shots with either lens.  You can check out the XS and 50-500 combo results here:  http://araasch.zenfolio.com/p652762432  A couple of samples...
