5N Video set up question plus example

I would like to attempt to shoot video and would greatly appreciate any set up help.

I would be shooting buildings and spaces like the video example at the bottom of this post. So I'm not shooting people per se.

I have read that I should shoot it in portrait mode with contrast -3....color 0...sharpness -3.

In order to have more latitude in post. I have been working hard familiarizing myself with the camera.

What would be the best mode (M/S/A/P) mode and settings to make this the less trouble free for someone trying this as a novice? I would not record with sound as I would add music later and most shots would be outside in daylight.
