You took the words right out of my mouth. Best portraits are achieved with short to medium telephoto lenses with larger apertures. 35mm on FF just won't cut it.

The OP asked about shallow DOF. While I generally agree that lenses in the 85mm range are more suitable for head and shoulders portraits than is a 35mm lens, that is not a function of DOF. With the same framing, both lenses will give the same DOF at the same aperture.
