The 18-135 would be the most used lens for general people.  10-20 if you are up close or in rural areas doing landscapes etc.  The 70-200mm is for isolation not that I use it much it's a isolation lens can be for street photography incl distant subjects/composition.  I would not use it too much but you mentioned people photo's and like to capture life and speed.  Good for things like bullet trains photography and again isolation of traffic conductor or the train conductor etc.  If you into fashion and people, have a look at Harajuku on a Saturday morning/afternoon when they dress up.  it's a district in Tokyo and maybe Shibuya noted for its night time dense foot traffic.
