Would adding memory have a positive effect on it's overall speed or is that more of a function of the processor. Curious if I upped it to 16gb of memory (assuming that's even possible) if it would greatly increase the speed.
thanks

Two things will increase computer performance. Processor (faster) and Memory and both should be maxed out when ever possible.
So yes.
Just remember if you ever have to take the Mac for repair you have to remove any memory Mac did not install. If I recall and if something has changed they say it voids the warrantee. So I just maxed out memory when I initially bought the computer.
That is simply not correct, not even close. Memory is user upgradable. Won't void any warranty at all.

With the passage of time , there might be unnecessary stuffs stored in Mac like caches, language files, universal binaries, duplicate files etc.. There are many clean up tools available online. I would like to suggest you to gofor some Mac cleaning software to cleanup above mentioned unnecessary stuffs from you Mac drive.
