The key thing to know about the design of chips, whether sensors, CPUs, memory, A to D converters, etc. is that its all about intellectual property, that is, designs for various aspects of the complete chip. A chip may have IP from a number of companies, usually used under licence. Sony may have IP concerning photodiodes, Fuji the colour filter, and so on. I doubt anyone would develop the key IP for a sensor without leaving room for the incorporation of other IP to make bespoke products. Who actually makes a chip is irrelevant as virtually all of them have IP from several companies.
