I set the AEL button to lock and hold exposure. This is especially useful with the spot meter which I use quite frequently. So I might lock expose for the sky using AEL (perhaps to create a silhouette), then lock focus on my subject with AF On and then take the photo with the shutter button.
Note that for the majority of times that you don't you don't lock exposure, then exposure will be set with the shutter press as normal.
Being able to separate the three functions works for me. Others prefer other methods.
It's good to have options.
