If different people are going to be using the cameras and they'll be in rural and dusty places, keep the lens changing to a minimum. There's nothing wrong with the 7D you have. I think you're "overthinking" this.

I'm a Canon 7D user, but bought a Panasonic FZ 150 (since replaced by a FZ-200 and about the only difference is 200 is 2.8). The Panasonic has a 28-600mm (35 equiv) non-removable lens and shoots RAW and makes darn good photos. It is a little large than a pocket-sized P&S.
