I'm sure he just wanted to demonstrate the possibility of highlight recovery. (which is even more at iso 200)
I guess exposure -1 and fill-light +0.5 would do the same without getting a dark image.
The second image is too dark. Can you use fill light to bring out details in the shadows?
I wish Lightroom could develop X3F files as you can selectively choose areas to lighten or darken with its tools!
