Shooting a posing person with a handheld D800 still produces motion relative to the camera. In fact shooting ANYTHING handheld will have some motion relative to the sensor.

So AF-C would be best used with any handheld shooting as it constantly attempts to refocus.

AF-C also predictively anticipates on further movement. This may work out positive, but also in a negative sense (people do not move fluently).

It's not AF-S versus AF-C, it is understanding how it works to get most out of it as a photographer.
