A comprehensive list of my beginner wonderings, enjoy!

Hello and greetings.
Let me start of by saying, first post (yay), and that this will be a fairly long post of question, if you stick it out you are a champ.
 (English is also not my 1st language.)

Im looking for advice on everything contained in the thread (not my girlfriend... but everything else basically)

My dad is a sworn Nikon fan, so i know i want a Nikon Camera (No advice on this please).

My girlfriend and farther love their hobby, photography  and have both done so for quite some time, both of them working in quite varied scenarios with their cameras, all of this has got me interested in photography as well but i want to work primary if not exclusively with model / portrait pictures.

What i want to photo:

As far as two people standing next to eachother.
As close as an eye.
Photos with varying clarity (ie. model in foreground clear, background blured or Bokeh).
Pictures with to much exponation (things seem to white).

I dont know what lens to get, but i was considering either a 50 or 85 mm 1.8f what would you get for this - and what? (feel free to cut stuff out or offer lences for each individual goal).

I went and looked up a few cameras as follows myself:

3200 - 5200 - 7000.

My immediate favorite was the 5200 because it has the biggestmegapixel number! ( kidding ) but in all seriousness, the questions i have with these cameras (just as houses) are:

The 5200 has an EXPEED 3 - the 7000 an EXPEED 2 - how much will this effect the pictures i want to take.
The 5200 lacks the AF engine the 7000 has are there sufficient lenses that offer AF-S that this does not mean as much. 
Unlike the 5200 and the 3200 the 7000 boasts a magnesium alloy housing - how does this help?
IF i buy the 5200 and use a AF lens (without build in focus engine) is it easy to get it to focus anyway?
Other then that starting out as i am - what would you buy?.

I am looking to spend 8000 DKK (which is around 1000£ 1400$ irc)
