Why would you RAID 0 an SSD? You won't pick up anything in speed. All you do is complicate your life and spend money. If you were thinking RAID 1, then just clone the drive nightly and boot off that one if the SSD fails.
If you want to use 2 SSD's in a MacPro, I would suggest
- boot drive SSD as big as you can afford. Keep the system and apps on it
- smaller SSD for Photoshop and whatever scratch drive then
- Multiterabyte HDs for storage, either in RAID 1 or regular drives, as you desire
