DMF allows you to adjust focus manually, while still relying on AF to get you close.
In a true MF situation, you do not want any AF to occur. Switching the AF/MF switch allows you to forgo the initial AF that for whatever reason you do not want to occur in a given situation. Presumably, using AF lock (toggled on/toggled off) might give you something similar.
