Nikon D3200 w/ good lens or D7000 with kit lens?

Nikon D3200 w/ good lens or D7000 with kit lens?

I recently purchased (and sold) a Sony NEX camera due to my dislike of "Sony colors" and lack of physical dials and controls. Later, I was strongly interested in getting a Fujifilm X100s (or the variant X-E1) due to the new sensor (x-trans) and rangefinder style.

Make a long story short, I am now thinking about overall versatility and price ($1200+ is a lot to spend on what is essentially a point n shoot with a load of bells and whistles).

My two options:

Nikon D3200 with Tamron 17-50mm f2.8 and possibly 35mm 1.8

or,

Nikon D7000 with kit lens (18-105mm)

I love having a fast lens (bokah) and keeping ISO's down - do I need to worry as much with a good DSLR (differences between cameras in these aspects?)

Weight is the final concern. As I would be using it as mostly a travel camera (Disney in October) - would there be a considerable difference between the two.

About me: Family, street, and landscape photography (mostly during special events, holidays, travel). Current camera is Ricoh GRIII. Enjoy prime lenses (due to having to work harder to achieve photograph). Shoot entirely in Aperture mode.
