Typical RAW-to-B&W workflow? Or JPG film-sim?

Hi all,

I'd be very grateful if anyone who has experience of shooting monochrome would summarise their typical workflow, from RAW conversion through PS, Silver Efex etc, and including any preferred default settings for sharpening, levels etc? I have all the software, but am a bit bewildered by the options, and anxious about the ease with which clumsy application can ruin an image.

I've had great fun shooting JPG only with the various film simulation options, and I know many X-Series photographers don't look any further and have great success, but I'd like to learn more about how 'serious' monochrome shooters do their thing...
