I'm not sure why you're asking the question, or why you think producing a headshot with a white background requires a "huge setup."  I don't keep up with the latest extraction tools for Photoshop, so I don't know how good they are now, but wouldn't they require you to shoot against a plain background? If so, why not just use white to begin with? A headshot with a pure white background would be quite simple to produce using just one light for the background. Why add the extra step of extracting a person from another background and making it white?
