Canvas is a great and classy material to print on!
I am surprised that your clients really want glossy! I find that in the East coast where I live they prefer a lightly textured art paper and find Glossy to look cheap. I use Red River Ultra Pro Satin and that's about as shinny as I tend to go.
Personally I do love a nice Glossy Print for some images and that's where the CONE dye inks come into play.
