a) there's no "too big" in lighting b) on common ceiling heights you can't place a 60" umbrella at sufficient height level, risking "underlighting". c) the beam spread of your flash will likely be wide enough to fill the umbrella of the 46", likely not of a 60". So all speaks for the smaller variant.

2. If I do get the 60" Softlighter, will my Canon 600EX-RT flash be powerful enough with the larger umbrella?

Size of the softbox doesn't matter much in this regard. Add the silver lining disc in case you need more power.

3. The strobist.com website recommends a LumoPro LP605 7ft. compact light stand and LumoPro LP633 umbrella Swivel w/ flash shoe adapter. Would this light stand/adaptor be sturdy enough to hold either the 60" or 46" Softlighter or would I need to buy something else?

It's a wide spread misconception that a light stand for a light weight flash may also be of light weight. Better get a stand that isn't tipped over easily when you or audience accidentally kick it. I'd suggest getting a C-stand:
