I love my Fuji but am I the only one here who thinks that this photo would have reached the same "amazing heights" if it was shot by any modern camera?

Yup.  Almost any modern camera could have produced this photo.

There will be difference in noise and grain, and colour (which was edited anyway), but not enough to detract from the photo at ISO 2500.
