Safari photos with rebels

I have just upgraded to the 650D and my 450D now becomes my second camera.  I too also have the 70-300mm L IS USM lens and am heading off on safari in a couple of months to South Africa.  Given that you are shooting the same combo I'd be really interested in the way you have set up your 650D and what picture mode you are using, ie. standard/landscape/faithful etc.  Finally how have you found exposure in general, have you needed to dial in much compensation?
