Totally agree with you. In fact, the onslaught of B&W images has become so enormous that when I see a gallery or set of B&W images, I often just skip it automatically, unless there's something immediately gripping about the images, which there rarely is.
I find this comment quite odd. The onslaught these days is in color images. I wonder if there is an age thing at work here. Those of us who are older (I'm 56) perhaps skewing more towards B&W because we remember how so much of photography was B&W based, including in the media (we remember a time, for instance, when color images were non-existent in newspapers...and when color fine arts photographers were deemed "pioneers")? Anyway, as a percentage of total photography color is by far the dominant formal quality over B&W.
Then there's the gripping bit, which I also wonder about: gripping in what way? Subject matter? Content? Formal qualities?
Like someone else said, many people also just don't know how to do proper B&W images (I don't know how to do them properly either, but then maybe 1/1000th of my images makes me think it'd look better in B&W, so I'll probably never learn).
One reason, continuing from above, that the older of us perhaps favor B&W is that those of us who did darkroom work for the most part did our work in B&W, color processing being far more difficult---and B&W was difficult enough. Therefore we got used to B&W and started to understand the monochrome image and what made a good one. This speaks to your last point, in a practice makes better, if not perfect, way---and it also trains the eye/mind.
I love colour (when used sensibly)!
So do I. Sensibly to me means that the color, as opposed to the light-dark values, is more important to conveying the other formal/structural aspects of the image, or are necessary to conveying some subject/content aspects. The formal/structural bit is part of the eye/mind training.

Tex, no offense but I have to disagree with you regarding this having anything to do with age and previous experiences in the Darkroom. Why ? Considering my age, you are just a BOY in comparison. I have been (trying to do a good job) with Photography for over 60 years with many years in the Darkroom processing and (in my opinion) the B/W vs Color has no consideration in age.
Generally, when I view a (less than good) B/W picture, it usually makes me wonder if the person converted an image (that was not good in color -- for whatever reason) to B/W since a number of Photography (and post processing sins) can be covered up when converted to B/W which usually results in a very poor quality B/W image.
I would tend to believe that some of the B/W being discussed are by the "Younger crowd" that want to experiment and probably have never exposed a true B/W image with a Camera. Certainly, I have been wrong before.
The main issue with many of the posted B/W images is that they are NOT even close to a quality B/W photo. Also, B/W is best illustrated as Printed Photos as compared to viewing on a Monitor. Also, usually an exceptionally quality B/W Photo can be accomplished only with the proper subject and NOT by converting (just any image) to B/W.
I do like excellent B/W printed Photos, however; after changing to using the Canon DSLR Cameras -- exposing in RAW for color, I very rarely convert images to B/W. Certainly, I have many thousands of B/W Negatives exposed with some of the best Cameras using quality film and personally processed -- so I am NOT without B/W images when needed. I also have developed and processed many Color Photos in past years. Digital is somewhat easier, however.....
Many B/W images that are posted are (in my opinion) many times basically ruined due to losing details in the Shadow areas and "Blown" Highlights.
