I have done many safaris in India and Africa. Based on this experience, I would suggest:

1. Have two bodies - dust can be a big issue for gear. Avoid changing lenses in the field.

2. Recommend the 70-300L IS. I have previously used the Sigma 100-300 F and Canon 100-400L on safari in Africa - two big heavy lens (both used on bean bags).

Since 2011 I have been shooting with the 70-300L IS. Overall I am impressed overall - the image stabiliser performed better then a friends 100-400L give a better keeper rate.

The only downside is 10% of the time you wish you had greater reach but this can be mitigated by cropping. Here are some examples with this lens:
