To answer your question, I highly suggest shooting in RAW to recover that blown out red. Did you know Adobe CS2 is now free? Get it if only to use Camera RAW to process your files.
Now to get better flower shots, it's actually not hard nor do you /have/ to buy new lenses as others have suggested, but you'll have to do some intensive manual labor to achieve similar results ;P Since the kit lens isn't very fast, to really separate the flowers from the background, you'd have to position them much further away (from said BG), and get in as close as possible.
Of course, it's much easier to just get a fast prime lens (or go macro).
