What constitutes a good urban kit?

While I'm intrigued with some of the new mirrorless cameras (Fuji Ex1 or Olympus EM5) for light weight urban travel, I also realize that simply decreasing the number of lenses and bodies carried can save a lot of weight, too.

Urban photography to me is candid street photography and museums and famous monuments.

So for a visit to New York or Paris, how about:

Nikon D800

35 mm f1.4

70-200 f4 VRIII zoom

This is similar to having an Olympus OMD EM5 + 20 mm f1/4 + 45 mm f1.8.

The Nikon system is larger and a little heavier but still much less than the  three f2.8 zooms + macro + 35 f1.4 that I usually travel with.  And, I already have all the Nikon stuff.  The Oly system would cost about 2 kilo dollars.
