Other than waterfalls, I am not quite sure why you would be adverse to speeding up the shutter speed and rather close down the lens.

The DOF does not change because of FX, the DOF changes because you are using longer lenses for the same FOV.

I am not sure how you conclude the fact that your camera is cleaner at all ISO levels equates to you deliberately reducing the available light so you can equate ISO levels. Also note that the D600 has an ISO of 50 if needed to address specifically what you are concerned.
