If I dont plan on editing the image: Should I shoot in RAW or JPG?

In-camera, or not in-camera... That is the question.

If you set any controls in your camera that effect the image such as color saturation, noise reduction, etc. (I'm sure someone will correct me if I'm wrong about this), I BELIEVE that none of those settings will show in a RAW image, as it is unaltered sensor data.  In JPEG it applies all those cutesy settings in-camera.  If you shoot RAW, then the image won't show any of those image 'upgrades'....  I think....
