Think Depth of Field!

You are shooting far-away subjects. Most likely landscapes or some other scapes. Don't you want to have a deep depth of field in those images? So, don't sweat the exact infinity setting. Think about how much DoF you would have at a certain range of focal lengths and apertures, and then just set an estimate. You'll be fine. To increase your DoF, you even don't want to set to infinity, but to somewhere closer, and close your aperture some more. So, there.
