Somebody please explain! Why X-E1 JPEGS are darker?

You are at the root of why I don't compare settings from JPEG images in autoexposure modes.  You really need to shoot RAW, then you can see if one manufacturers RAW is darker at the same shutter speed/aperture.

Manufacturers don't do this so much to cheat, but to protect highlights.  Look at how much better the highlights look in your Fuji image than in your Canon image.  Sensors with a lot of noise (the Canon) over expose to make the shadows look better.
