Those are the main things to change. You can also adjust color, saturation, contrast, sharpness, filters, special effects... but you can do that in other modes as well.

I have been shooting since the mid 70's. Always use AvĀ (Aperture Priority), Tv (Shutter Priority) or Manual depending on the situation. I mostly use manual when shooting things like my friend's sons hockey games where I set the exposure once and just take pictures and all come out properly exposed. I do that because the lighting on other modes might change if a light is in the photo or not when it doesn't need to and since the lighting doesn't change it is easy to work with. I use it anywhere you don't need to make constant adjustments else I leave it on mostly Av.
