Advise on OMD & DSLR please

Ok so I have finally come to a choice of 2 systems, but would like some advise before pull the trigger!
I shoot mainly landscape but also do like wildlife and for over a rye ad I have been very undecided about which system I should buy.
My priority like most is maximum quality in the smallest package, but I also understand that shooting wildlife means big glass!
So hear are my two options
1. Olympus OMD-EM5 + Panasonic 12-35 f2.8 + 35-100 f2.8 + 100-300 and OMD grip
2. Or buy the OMD with kit lens for light walkabout stuff and buy a DSLR with telephoto
as I understand it the OMD is good up to 1600 ISO but IQ is not as good as the Fuji EX1 or Sony NEX 7, so I guess you sacrifice some quality for the benefit of portability, but by how much?
My total budget is £3500
