You do not need to let it warm up for 3 hours.  I do this daily in a situation where the camera goes into a high humidity room that is 20 degrees warmer (F) than where it is stored.  I place in a plastic bag for 15-20 minutes and it's ready for photos.  Even if you went into a situation that was 40 degrees warmer, I can't imagine it would take more than 40 minutes.  You will not be able to purchase a DSLR that gets around this condensation problem any other way. If you plan ahead it's easy to take care of.  Warm the camera up before you get to the photo location and you can start taking images immediately.
