Why wouldn't FujiFilm want to do this?

Nothing wrong with the mechanics of what you are suggesting but I reckon it would infuriate existing X-Pro1 and X-E1 owners if the "s" versions were to suddenly become available.

It makes better commercial sense for Fuji to implement these and other improvements within a major upgrade of the models.
