We see what our brains tell us what we should be seeing based entirely on experience, as long as there are not too many distractions. The bayer blur is a distraction that is not in foveon images when they are clean and sharp.

Watch this video if you want to see a good example of how the brain can distort reality. It uses clues to form what we perceive. When we see 3D in an image it's just our brains inserting what it knows is probably true.
