Annoying aperture setting in S mode with SEL35F18

I need some help and I'm sorry if these issues have been covered before on this forum. I'm a NEX-6 user.

I've just gotten my SEL35 and this is my first AF fast prime (previously I had a CV 35 1.4). I love it, except... I want to use the max aperture (f1.8) but keep the shutter speed reasonably fast (1/60) an the ISO as low as possible so I went into S mode and set the shutter speed to 1/60 but when I shoot the aperture will not stay wide open but rather will be like 2.2 or 3.2 and the camera choose a higher ISO to make the exposure correct. Maybe someone can help me out here? I guess I'm "spoiled" by my experience with MF lenses (where S mode is like M mode with auto ISO and this situation would never happen). I think the inability to use AutoISO in M mode seems like an arbitrary decision to cripple an otherwise great camera.

I also want to use DMF with the focus-recompose method. I have to half press the shutter and turn the focus ring to get the focus I want. The problem is after I do this I can't seem to get out to full frame view to recompose. Many thanks.
