It's just different style of shooting.
I like to pre-focus and then press shutter release at the right moment with absolutely minimum amount of lag.
I don't like the touch shutter where you need to wait for the camera to achieve focus first and then release shutter. I just find that it introduces more lag (even if it is a fraction of a second) than my usual way.
There is no right or wrong way, just different style of shooting and different preferences.
