For your advance visit(s), which will answer most of your questions, what sort of "event" is this other than, obviously, involving horses.  Go there at the same time of day the event will be held to see what the light issues may be.  Plan for the expected weather.  Get an idea of where you will will/not be allowed to work from.  Answer your own questions as to the correct lens(es) to use.  Have a back up body with you as the only time your main body fails is when you have no back up.
