When you know what to shoot, and what the end product will be, there is no issue.

When you chase technology, spray and pray for a few good shots, yea, you get what you get.

When shooting scenics and some subjects, full res raw, however, for many many paying work I have no need to shoot full res on my 18Mp 7d, or 10Mp 40d's.  I can get a perfectly fine 16x20 from a lot fewer Mp, thus mediium or small is dialed in.  RAW for some work, Jpeg for other.

When you know what to shoot, and what the end product will be, there is no issue.
