Help me learn! FZ200

I'm a proud new FZ200 owner. I am still a novice, only recently taking photography seriously, but I'm very keen.  I've been watching tutorial videos by Graham Houghton for the camera, who appears to shoot for  jpegs sooc  and Serge Ramelli who shoots raw with a dslr and special lenses and  purposely underexposes his photos so they have more range for editing in Lightroom. Both produce very nice work imho but very differently.

I'm not sure which route to take. I use my pics for print, home archive and web use. Is it one way or the other or is there a middle ground? Is my direction dictated by the small sensor and noise issues?  Am I overcomplicating the issue as usual?
