I had a S5 Pro that I used for almost 2 years for wedding photography as my main camera when it first came out. Loved the colors as did my clients and I made many additional print sales on packages. Then I bought the Nikon D700 and I must say, the colors in Jpeg on D700 actually look like an upgrade to the Fuji S5 Pro (clean, sharp, and lots of high detail resolution with good glass and the color saturation is very decent). I use it in Neutral setting and plus 1 saturation and it is close enough to my liking compared to Fuji. I even tweak the colors in post to look like Fuji sometimes when I need to, although lots of times only very minor adjustments are needed. I also picked up the D300s however this sensor is much different than the D700 and I think the colors are still better on the D700 for skin tones. D300s is fairly good and sharp, and I can get great images in good light, but the D700 is the best all rounder in all light with great color. This years Nikon D800 may also be good, but I do not have that yet. I wanted a DSLR FF in Fuji, but that likely won't happen anytime soon or at all so I went to Nikon. If going for a lighter weight camera, the new Fuji mirrorless cameras likely have excellent color as well, as I see in sample photos.
