If you do go Nikon, you may want to consider something other then the D800. It is a fabulous camera, but to big, to heavy and the file size is crazy. You may want to consider the D600 or D7000 if you can live with DX. I know what you mean about Fuji colors, and with some tweaking the colors from Nikon aren't bad (I turn down the hue to -1 on my DX cameras, boost the sharpness a bit and you should be able to live with it).
I'm not interested in the D600, and no way will I stay crop if I get another SLR. I dont get the comment about the D800 being too heavy. Any Nikon camera I slap the 24mm lens on will be a lead weight and even so, it is not a deterrent for me to use. Weight is not an enemy to me, not yet anyway. I'm turning 45 in a few weeks and can't start letting such minor weights become an issue. Dealing with weight has never been a problem for me because of one simple solution: I have an excellent camera bag. Once you have a well designed bag, then you can work with an enormous amount of gear. I used to trek around Asia with a Canon SLR, 20mm, 35mmL, 50mm, 85mmL, and 100mm Macro lens all in one bag, hiking for 7-8 hours in 100 F heat with NO problems. You just need an excellent bag.
