Sounds like Exposure Delay Mode.
See page 162 in the D5100 Reference Manual: http://www.nikonusa.com/pdf/manuals/dslr/D5100RM_EN.pdf
But that wouldn’t explain why this does not happen in other modes. Hmmmm.
