On a tripod - Set to manual focus and use a stand in - or object (cardboard box or something) sitting in the place where you will sit to get the focus right - then use the self-timer!

Or you could also measure a focal length to one object point nearby set with MF and then rotate the head and recompose without refocusing putting your face that exact same distance from the lens.  A simple fabric tape measure or even a string will do this nicely as an aid.
