I'd recommend the D800 and 24-120 f/4 VR combination. I have that combo, and it is amazing. As I have said in a previous post, if I could have only one lens, that would be it. It is the ideal walk-about.
It is a fairly expensive lens, but I am continually amazed by the quality, given that it is a zoom. It is super sharp. The range is great: 24 is nice and wide, 120 is a good mid tele, and the VR is also superb. I've taken shots in cathedrals at 1/6 s and the shots are sharp.
As my budget got replenished, I supplemented it with a few primes (the 85 f/1.8g is superb and relatively inexpensive, and the 50 f/1.8g is a bargain if you can find one in stock). For WA, I went with the 16-35 f/4.
I can't comment on Canon, as I have no experience (at least, no experience since the 1970s!).
